We brought this one back for you fans of dark roast, full-bodied coffees --and fans of Bali Blue Moon. Flores Bajawa Ngura is an organic, wet-hulled coffee cultivated in the Bajawa region of Ngada Regency on the Indonesian island of Flores. Often called “Komodo Dragon” coffee, it is celebrated for its rich, full body, low acidity, and remarkable complexity. Our dark roast highlights notes of baker's chocolate & cocoa, molasses, and vanilla bean. Its unique character comes from the area’s fertile volcanic soil combined with the traditional wet-hulled processing method.

What is wet hulled processing? Wet-hulled coffee, or Giling Basah in Indonesia, is a special way of processing beans that gives them their bold and unique taste. After the coffee cherries are picked and pulped, the beans are only briefly fermented and washed. Instead of waiting for them to dry completely, farmers remove the parchment layer while the beans are still moist, then lay them out to finish drying. This unusual step, developed to suit Indonesia’s humid climate, leaves the beans with a bluish-green color and creates the full-bodied, earthy flavors with low acidity Indonesian coffees are famous for.

A Good Dark Roast Coffee

Piping hot in cup, this is a bright deep flavorful coffee. It has an initial deep full flavor that slowly fades. There is almost zero lingering flavors or notes unlike Bali roast. Its similar in tones but is not an alternative nor replacement for Bali Blue moon.
