We've been buying Perla Negra from our friends at Las Lajas since Jay first traveled to meet Dona Francisca and her husband Oscar Chacon and visit their world renowned farm and micromill in 2017. Our roasts have previously rated Top 30 Coffees of the Year (Coffee Review). The word has gotten out about Las Lajas - but we're lucky to be a legacy buyer and secure some of their best lots every year. This is a fruit forward and floral coffee crafted for home pourovers & connoisseurs looking for an exceptional, naturally sweet & juicy cup.

Oscar Chacon's grandparents started what is now Las Lajas in 1948. Over time, Oscar and Francisca inherited the farms and therefore became coffee producers. In 2000, they started processing coffee themselves at the Las Lajas mill, largely focusing on yellow, red and black honey processed coffee. However, on February 8, 2008, the Cinchona earthquake struck and significantly impacted the area. After a week without drinking water or electricity, they realized they needed to figure out how to process their harvest since they were unable to produce washed or honey coffee. Eventually, they decided to process the coffee naturally, resulting in their now famous natural processed microlots.
So what is a Perla Negra? The proprietary developed by the Chacóns is a signature natural coffee method created after the 2008 earthquake forced them to dry cherries without water or power. In this process, only the ripest, high-sugar cherries are harvested and dried whole (without pulping) on raised beds or patios. Unlike many naturals, the cherries areturned constantly throughout the day, ensuring even fermentation and preventing over-fermentation. After about 10 days of sun drying, they rest briefly in bags, then return to the beds to finish, with the entire process lasting 22–27 days. The result is a coffee with vibrant fruit-forward flavors, wine-like sweetness, and bright clarity, often showing notes of chocolate, cherry, berry, and citrus. Perla Negra remains one of Las Lajas’ most celebrated innovations.

Might be my favorite from Magnolia Roasters!
Just opened a bag of Las Lajas Perla Negra for the first time this AM. WOW!!! Whole and ground bean nose is dead on to notes in description. Brilliant beans and roasting. Very smooth with balanced acidity and strawberry, cacao (dusty), dark honey and fruity sweetness. Hopefully, I will be able to re-create this morning's mug over and over. 1:16 ratio, medium grind (#6 on Fellow Opus), 3 minutes immersed with 1/3 water in a Hario Switch (Ceramic) and remaining 2/3 water pour over with Switch open flow in 2 pours. Another absolute gem from Magnolia Roasters and possibly my favorite to date!!

This year's crop of Perla Negra did not fail to impress. The Perla Negra has been one of my favorite coffees Magnolia offers. We have been drinking pour overs and drip this past weekend and really enjoy this fruit forward cup of coffee.

Love this coffee!
Love the fruity chocolate notes! Perfectly roasted and fresh. Tastes great with or without cream. I’d be perfectly happy to drink this everyday and would not get bored with it.
The flavor notes on this coffee are fairly muted compared to other Ethiopian beans I have tried(from Magnolia & other roasters). Personally I prefer the more traditional berry-forward flavors from Ethiopian beans. Brewed with both Aeropress & Hario Switch.

Not only is this one of the best coffees I’ve had, the small business behind it is just as impressive. I stumbled on Magnolia Coffee while going down a Reddit rabbit hole, and their Jade espresso blend caught my attention. Turns out they’re highly rated and just two miles from me. Got a chance to talk to the owner and their master roaster. Great people and an even better product.

Delicious Coffee!
I love their Papua New Guinea single origins. It’s a delicious daily drinker. Makes a great French press, Iced Coffee and I’ve pulled excellent espresso shots with it too. Highly recommend.
